Rub with olive oil, dried herbs, salt and pepper.  Cook at 450 for 25 minutes, let oven cool to 250 and roast until thermometer reads 120-130 internal temperature.  Let rest under loose foil for 20+ minutes.  Slice very thin.


Top Round Roast that is best roasted in the oven and sliced very thin.  Serve with gravy and mashed potatoes, or makes really great sandwiches or wraps.
