Two basic cooking methods. Dutch Oven and Crock Pot. Both with vegetables, herbs, broth and red wine liquid level to top of meats. For 4 bone thinner cuts, 2.5 hours in oven at 300 or 6 hours in crock pot on low. For 3 bone thicker cuts, 3 hours in oven at 300 or 7 hours in crock pot on low. Cut ribs apart and brown on stove top before cooking.
Short Ribs are cut from the primal and chuck sections of the carcass from the meaty rib numbers 6-8 and are generally 3 to 5 inches in length. Each package usually has 3-4 rib pieces that are about 2 inches thick.
