Cook similar to a flank steak, medium-rare 125-130 range and let rest a full 10 minutes. Grill or broil is best, until desired temperature reached. Will increase in temperature by 5 degrees resting. Slice thin across the grain before serving. Always use a meat thermometer.
This steak comes from the inside of the round heal and is on par with flank steak, but with a finer grain. Cook like flank steak.
